Hi, my name is Anthony Chang Jun Kim, Which you can just call me Anthony. I really liked cooking since I was in my middle school, and the interest has been kept growing since then. I studied Korean cuisine and the Japanese cuisine for the government certificate. After getting those, I also got interested in the Italian cuisine, and got me into an Italian restaurant. The restaurant was called 'Rimini', which I've worked for about seven months. Even now, it was one of the most precious experience for my culinary life.
When I went in the first time, I washed dishes for ten hours a day and worked five days a week. After washing dishes for two to three months, the chef started teaching me how to prepare the restaurant before the opening time. Then, on and on and on, I finally got into the actual kitchen, and made pastas and risottos.
One of the reason why it was a great experience for me because it made me more motivated about cooking, and kind of helped me see wider about foods. I made pastas of my own at home, and started looking for more kinds of food and tastes I didn't know. I think the reason why I want to become a chef is quite related to what I've said. The thing I really like about cooking is that it has so diverse kinds of foods, and the creation of foods is not limited. When I started cooking I just started cutting and grilling foods, but as I learned more, there were numerous kinds of wonderful flavors in the world. I want to try making the great flavored dishes, and also make a fantastic flavor of my own.
To be honest, I'm not really sure about what I am going to be doing in five years. I used to have an image of myself in five years. Before, I wanted to graduate george brown chef school and gain some amazing experiences in Toronto. Then, I would have gone back to Korea to run my own restaurant. But now, after experiencing the industry and studying more about cooking, I'm also having thoughts about going to another country to study their cuisine. Such as Italia or Japan. I am going to decide my decision as I study more about cooking, and I consider the process of making the decision, making my future is doing well on the basics.
Ther pictures below are the dishes I made before. The pasta is a vongole pasta, and the other dishes are sushi and shrimp canapé. As you can see from the pictures, I wish I can cook lots of foods from diverse cultures. Thank you for reading my post.
